The first stage after vanilla is picked is wilting. The goal is to kill live cells or stop vegetative growth, and encourage the working of enzymes for the formation of vanillin and aroma.Without the wilted aroma typical vanilla will not be formed.wilting is done by dipping vanilla fruit into hot water 65c. The duration of dyeing depends on its grade. Large fruit (length 18-22 cm) dipped for 2.5 minutes. Whereas small and medium fruits (length less than 18 cm)
dyed for 2 minutes. Foraging at high and too long temperatures can damage the enzyme in the vanilla fruit.

To dip the vanilla fruit in hot water is usually used bamboo basket. Fresh vanilla fruit is put into a bamboo basket, then put in a container of hot water for 2-2.5 minutes.and than lifted and drained until the water does not drip.
